Ingredients: 4 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 1/4 teaspoon baking soda 1/8 teaspoon cinnamon 1/3 cup (1 stick) unsalted butter, cubed 1 cup raisins, sliced 1 cup granulated sugar 1/5 cup raita, roma, or other sweetener 2 cups fresh raisines, sliced Instructions: In a bowl, whisk together the flour, baking powder, salt, baking soda, and cinnamon.
Stir in the raisings.
Add the butter and sugar and mix until combined.
Preheat oven to 375°F.
Place 1 cup of raita and 1 cup sugar in a food processor and pulse until coarsely ground.
Add remaining sugar and pulse to incorporate.
Add raita to the flour mixture.
In a separate bowl, combine the butter, raisons, and granulated sweetener.
Beat until smooth.
Add to the cinnamon mixture and mix well.
Spoon the mixture into a greased 9 x 13 baking pan.
Bake until golden brown, about 35 to 40 minutes.
Allow the bread to cool for about 10 minutes before slicing.
Store in an airtight container. Enjoy!
